Rules in config/mail.toml decide the category and level; a local model only fills the gap for mail no rule matched. Changing either here stores it as your correction, and re-ingesting the message never overwrites it. The raw message stays on disk in archive/mail/ — only these headers and a short excerpt are in the database.
